Masala Puri (Street-Style Chaat)

Masala Puri is a popular Indian street food made with crushed puris topped with spicy potato-pea gravy, fresh vegetables, and crunchy sev. This homemade version is full of flavor and easy to prepare.

๐Ÿงพ Ingredients

For Cooking Potatoes & Peas

  • Potatoes – 2 medium

  • Green peas – 1½ cups (frozen, or dried peas soaked overnight)

For Masala Paste

  • Ginger – 1 inch

  • Garlic – 4–5 cloves

  • Mint leaves – few

  • Coriander leaves – handful (more than mint)

  • Tomato – 1 medium

  • Water – as needed (for blending)

For Masala Gravy

  • Oil – 2 tablespoons

  • Cumin seeds (jeera) – 1 teaspoon

  • Onion – 1 medium, finely chopped

  • Garam masala – 1 teaspoon

  • Red chili powder – 1 teaspoon (adjust to taste)

  • Coriander powder – 1 teaspoon

  • Chaat masala – 1 teaspoon

  • Salt – to taste

  • Water – as needed (for watery consistency)

For Assembly

  • Puri (chaat puris) – as needed

  • Onion – finely chopped

  • Tomato – finely chopped

  • Coriander leaves – finely chopped

  • Sev – as needed

  • Extra chaat masala & garam masala – for sprinkling


๐Ÿ‘ฉ‍๐Ÿณ Method (Step-by-Step)

Step 1: Cook Potatoes & Peas

Add potatoes and green peas with enough water in Instant pot or pressure cooker. Cook and et pressure release naturally.

Peel the potatoes, mash them together with the green peas, and keep aside.



Note: If using an Instant Pot, pressure cook for 15 minutes. If using a traditional pressure cooker, cook for 3 whistles


Step 2: Prepare Masala Paste

Add ginger, garlic, mint leaves, coriander leaves, and chopped tomato to a blender. 


Add a little water if needed and blend into a smooth paste.Keep aside.



Step 3: Prepare the Gravy Base

  • Heat oil in a large vessel or kadai.Add cumin seeds and let them splutter.



  • Add finely chopped onions and sautรฉ for 1–2 minutes until soft.




Step 4: Add Blended Masala

  • Add the blended paste to the onions. Mix well and cook on medium flame.





Step 5: Add Spices

  • Add garam masala, red chili powder, coriander powder, chaat masala, and salt.




  • Mix well and cook for 2 minutes until the mixture thickens slightly.


Step 6: Add Potato–Pea Mash

  • Add the mashed potatoes and green peas to the masala. Mix well.



  • Add water to make a slightly watery gravy.



  • Simmer for 3–4 minutes and switch off the flame.




๐Ÿฅฃ Assembling Masala Puri

Take chaat puris on a plate and crush them lightly.




Pour 1 ladle of the hot masala gravy over the puris.


Top with finely chopped onion, tomato, and coriander leaves.


Sprinkle chaat masala and garam masala. Finish with generous sev on top.


Serve immediately.

  • Gravy should be thin and spicy, not thick.

  • Adjust spice levels according to taste.

  • Serve hot for best street-style flavor.

  • You can add lemon juice for extra tang.
